MOMMA HILLY BEANS MAGIC STEW (LOW SLOW COOKED)

This is a slow, low cooked crock pot vegetarian stew.

1 cup of pinto beans (pre-soak 24 hours in advance to avoid gas)
2 cups of water
3 chopped tomatoes
1 tablespoon of minced garlic
Dash of lemon and pepper seasoning salt (salt, white pepper, black pepper and lemon peel)
10 marinated artichoke pieces with some of the olive oil (from a jar)
1/2 cup of virgin olive oil

Marinaded for 30 minutes:
1 cup of Crimini mushrooms
1/2 cup of chopped onions

Marinade for mushrooms and onions:
1/4 cup of balsalmic vinegar
1/4 cup of raw apple cider vinegar
1 tablespoon of maple syrup

Place these ingredients in a crock pot along with the marinated mushrooms, onions and marinade broth as well and simmer on low all day and all night, then eat.

My Personal Review:
This has a tasty meaty flavor without the fatty saturated cholesterol oils! The taste buds that taste meat are called UMAMI. There is a definite umami flavor. I only knew about sweet, salty, sour and bitter taste buds. Most scientists agree there is a fifth taste bud, which is called umami. This stew makes me believe umami is there as well. This recipe was created with my lovely mother.
